Consuming burned or charred red meat on a regular basis may increase a person's chance for pancreatic cancer by almost 60%, according to a study led by Kristin Anderson, PhD, of the University of Minnesota School of Public Health. In this study, researchers tracked disease-free participants in the National Cancer Institute-sponsored PLCO trial and identified 208 cases of pancreatic cancer over a 9-year period. Among Dr. Anderson's recommendations are cutting away charred meat and pouring off meat juices prior to cooking.
